Grilled Peach Sweet Tea Vodka Recipe

by Adventures in Cooking

2 ripe peaches, cut in half and pits removed 2 teaspoons granulated sugar 1 tablespoon olive oil 24 ounces iced black tea, such as English breakfast 8 ounces Hangar 1 Straight Vodka 2 ounces fresh squeezed lemon juice 1/3 cup granulated sugar 1 teaspoon pure vanilla extract

PREPARATION:

Sprinkle the inside of the peaches with 2 teaspoons of sugar. Use the olive oil to lightly brush the grill grate to keep the peaches from sticking. Place the peaches, cut-side down, over indirect heat on a wood or charcoal grill or over medium low heat on a gas grill, until peaches have nice char and are soft to the touch. Remove and allow the peaches to cool slightly before cutting them in half so that you have eight peach quarters. Set aside. In a large pitcher, stir together the sugar, iced tea, Hangar 1 Straight Vodka, lemon juice, and vanilla extract until the sugar has completely dissolved. Add the peaches and stir to agitate slightly. Cover and place in the refrigerator, allow the flavor to infuse for at least 2 hours or overnight.
